When u dont know what to do with left over chicken, you can always try your hand at this lovely summer cold chicken salad which contains the sweetness of mango and spice of red chili. The lime juice adds a zing to the salad. The main ingredients being chicken and mango, this salad provides protein and vitamin C

Ingredient quantities shown are for 3 portion

Preparation
- Cut ripe mango into cubes. Add in a serving bowl.
- Add chopped spring onions and red chillies chopped into small pieces.
- Boil the chicken, cut them in cubes and add them to the salad.
- Add some lime juice.
- Chop up lettuce and coriander leaves roughly.
- Toss the salad with the lettuce and coriander leaves.
- Add olive oil and toss again.
