Italian mushroom caps involves baking mushrooms with a little stuffing and topped with cheese. It is good for a vegetarian starter. Mushrooms provide lean protein and they have zero cholesterol, fats and very low carbohydrates.

Preparation

Prep Time: 15 mins
Cook Time: 20 mins
  1. Wash mushroom and hollow out the mushroom by removing the stem. Scoop out a little more with a scooper. Pat dry on a kitchen towel.
  2. Whisk olive oil, vinegar, garlic, salt, pepper.
  3. Rub this oil on the inside and outside of the mushroom.
  4. Chop mushroom finely and mix in the left over flavoured olive oil mix
  5. Sauté them for a minute.
  6. Add chopped onion and tomato. Sauté for few minutes.
  7. Add bread crumbs and coriander leaves.
  8. Add salt and pepper.
  9. Fill the mushrooms with this filling.
  10. Sprinkle mozzarella cheese and bake them in a pre-heated oven for few minutes until mushroom is done and the cheese melts slightly.
