Italian mushroom caps involves baking mushrooms with a little stuffing and topped with cheese. It is good for a vegetarian starter. Mushrooms provide lean protein and they have zero cholesterol, fats and very low carbohydrates.

Preparation
- Wash mushroom and hollow out the mushroom by removing the stem. Scoop out a little more with a scooper. Pat dry on a kitchen towel.
- Whisk olive oil, vinegar, garlic, salt, pepper.
- Rub this oil on the inside and outside of the mushroom.
- Chop mushroom finely and mix in the left over flavoured olive oil mix
- Sauté them for a minute.
- Add chopped onion and tomato. Sauté for few minutes.
- Add bread crumbs and coriander leaves.
- Add salt and pepper.
- Fill the mushrooms with this filling.
- Sprinkle mozzarella cheese and bake them in a pre-heated oven for few minutes until mushroom is done and the cheese melts slightly.
