coconut chicken soup

This soup is a lightly flavoured chicken with coconut milk.

Preparation

Prep Time: 10 mins
Cook Time: 10 mins
  1. Grind the ginger, garlic, coriander leaves, peppercorns, curry powder and green chillies to a fine paste.
  2. Sauté the paste in oil for a minute and add the chicken.
  3. Add one cup of thin coconut milk and bring to boil.
  4. Simmer until chicken is tender.
  5. Add the rest of the coconut milk and simmer for another few minutes.
  6. Pour in the tomato sauce and lemon juice.
  7. Simmer for a few seconds and serve hot.
