Preparation

  1. Cut the tops and bottoms of the okra.
  2. Soak it in vinegar for 20 minutes.
  3. Rinse the okra under running water and drain.
  4. Heat oil in a pan, add onion and garlic and sauté until soft.
  5. Add the okra and fry for about 5 minutes until it begins to brown.
  6. Add the tomatoes, tomato puree, salt, pepper and sugar and simmer for 20 minutes until okra is tender.
  7. Garnish with coriander leaves or parsley or some dried mixed herbs.
