Preparation
- Cut the tops and bottoms of the okra.
- Soak it in vinegar for 20 minutes.
- Rinse the okra under running water and drain.
- Heat oil in a pan, add onion and garlic and sauté until soft.
- Add the okra and fry for about 5 minutes until it begins to brown.
- Add the tomatoes, tomato puree, salt, pepper and sugar and simmer for 20 minutes until okra is tender.
- Garnish with coriander leaves or parsley or some dried mixed herbs.
