Vegetable curry

A delicious, healthy curry which you can make with your favourite vegetables!

Preparation

Prep Time: 15 mins
Cook Time: 20 mins
  1. Take the coconut meat and add 3 cups of water to it and blend.
  2. Strain the coconut milk which you get from this.
  3. Puree the tomatoes which have been kept in hot water for 10 minutes.
  4. Fry the onions in the oil or ghee until the onions are golden.
  5. Combine the turmeric and chilly powder and add it to the onions and continue frying.
  6. Add the yogurt, tomato puree and the boiled vegetables and fry again.
  7. Add the coconut milk and bring to a boil.
  8. Sprinkle the dry powder over the vegetables and cook it for a few minutes.
  9. Add salt.
