Raw Mango Salad

This is a Thai salad that I like a lot.

Preparation

Cook Time: 0 mins
  1. Cut the raw mango into juliennes (thin strips).
  2. Cut the spring onions into small pieces.
  3. Crush the red-chilly.
  4. Crush the garlic.
  5. Make a sugar syrup with a little bit of water and sugar.
  6. Mix all the ingredients, except the lime juice and cashews.
  7. Chill this for a bit for all the flavours to mix in.
  8. Use the lime-juice if you like extra tanginess or if the mangoes are not sour.
  9. Just before serving mix in the cashew nuts and garnish with chopped mint and coriander leaves.
