Paushtik pulao
Here is a sumptuous recipe of a vegetarian pulao with a different combination of spinach and mushrooms. This rice dish involving spinach and mushrooms is loaded with carbohydrates, protein, calcium, iron, vitamin K,A and folate.

Ingredients

Preparation
- Grind ginger, garlic, green chillies, elaichi and saunf into a paste.
- Heat oil in a non-stick pan, add onions and fry till brown.
- Add the paste and cook for 3 minutes.
- Add diced mushrooms and cook till tender.
- Stir in chopped spinach, tomatoes, chilli powder, salt and garam masala.
- Add 1.5 cups of water and the rice, cover with a lid and cook until rice is done.
- Garnish with coriander leaves.
