Onion tomato pumkin curry

This is the regular tomato onion gravy, but with pumpkins. More than just a Halloween candleholder, pumkin is one of the most nutritional fruits, rich in antioxidants, vitamins A,C,E, potassium, magnesium and fiber.

Cook Time: 15 mins
  1. Cut pumkin, onion and tomato into small pieces.
  2. Boil the vegetables in water with turmeric and salt.
  3. Grind coconut into a fine paste
  4. When vegetables are cooked, add chillli powder, curry powder.
  5. Let it cook for for 2 minutes.
  6. Add the ground masala and coriander leaves. Let it cook for 1 minute.
  7. Season it with spluttered mustard seeds and curry leaves.
