Onion tomato pumkin curry
This is the regular tomato onion gravy, but with pumpkins. More than just a Halloween candleholder, pumkin is one of the most nutritional fruits, rich in antioxidants, vitamins A,C,E, potassium, magnesium and fiber.

Preparation
- Cut pumkin, onion and tomato into small pieces.
- Boil the vegetables in water with turmeric and salt.
- Grind coconut into a fine paste
- When vegetables are cooked, add chillli powder, curry powder.
- Let it cook for for 2 minutes.
- Add the ground masala and coriander leaves. Let it cook for 1 minute.
- Season it with spluttered mustard seeds and curry leaves.
