Kaju Katli
One of my favourite Indian sweet dishes! Contains no added fat (except the whole lot that you get from the nuts but then the nut fat is supposed to be better than ghee/butter/oil) but loads of sugar and calories.

Ingredients
Ingredient quantities shown are for 20 piece
Preparation
- Grind the kaju (cashews) into a fine powder/paste in a spice grinder.
- Heat the water, add the sugar and stir till the sugar is completely dissolved and a single string consistency is reached.
- Remove pan from flame and add the cashew powder stirring constantly to smoothen the mixture.
- Spread the mixture on a lightly greased plain surface and let it cool. Keep the thickness to about 1 to 1.5 cm.
- Cut into diamond shapes (about 20) and it is ready.
