Hummus
is a Levantine Arab[1] dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is a popular food in various local forms throughout the Middle Eastern world

Ingredients
Ingredient quantities shown are for 16 tbsp
Preparation
- 1) Soak and boil the chickpeas (chana)
- 2) In a mixie bowl, add crushed garlic, 1 tsp plive oil, chickpeas and 1 tsp olive oil. Add a little water if required. Mix well.
- 3) Remove from mixie. Add salt to taste, chilli powder.
- 4) garnish with flat leaf parsley + remaining olive oil.
- 5) Optional ingredient - Tahini (sesame seed) paste
