Gajar methi

Gajar methi is a masala with methi leaves and carrots. Carrots being an excellent source of beta carotene and a good source of vitamin B1,B2,B6, C, K, biotin and fiber and methi, a popular vegetable in india which is rich in calcium, phosphorus, iron and protein is no doubt a nutritious dish.

Cook Time: 20 mins
  1. Cut methi leaves finely.
  2. Boil the methi leaves in salt water.
  3. Cut the carrots into round pieces and boil it until half cooked.
  4. Heat oil in a kadai, add cumin seeds.
  5. Add onions, sauté until brown.
  6. Add ginger-garlic paste, sauté for a minute.
  7. Add tomatoes and the dry masalas and cook it for a few more minutes.
  8. Mix in the methi,carrots and salt and cover and cook for sometime.
  9. Stir well and serve.
