Gajar methi
Gajar methi is a masala with methi leaves and carrots. Carrots being an excellent source of beta carotene and a good source of vitamin B1,B2,B6, C, K, biotin and fiber and methi, a popular vegetable in india which is rich in calcium, phosphorus, iron and protein is no doubt a nutritious dish.

Preparation
- Cut methi leaves finely.
- Boil the methi leaves in salt water.
- Cut the carrots into round pieces and boil it until half cooked.
- Heat oil in a kadai, add cumin seeds.
- Add onions, sauté until brown.
- Add ginger-garlic paste, sauté for a minute.
- Add tomatoes and the dry masalas and cook it for a few more minutes.
- Mix in the methi,carrots and salt and cover and cook for sometime.
- Stir well and serve.
