Eggs with curry sauce
Its a popular Indian dish. Here hard boiled eggs are cooked gently in a tomato curry sauce

Ingredients

Preparation
- Boil eggs in water.
- Once done, peel the shell and keep aside
- Heat oil in a sauce pan, add onion and ginger.
- Sauté for 5-7 minutes until onion has softened .
- Stir in turmeric, cumin, chilli powder, and curry powder.
- Cook stirring for 1 minute, then add tomatoes and chopped coriander.
- Cook for 4 minutes until the raw smell goes.
- Reduce heat and stir in the yoghurt, 1 tbsp at a time.
- Add salt and pepper to taste.
- Cut the boiled eggs in half lengthwise.
- Add to the curry sauce.
- Carefully spoon sauce over until all the eggs are well coated.
- Continue to cook over low heat for 5 minutes.
- Remove from flame.
- Serve hot with rice or chappatis
