Egg Bhurji

A tasty, nutritious egg dish. Wrap it in parathas for an easy school lunch. Eat it anytime, for a high-protien, healthy meal - with toast, bread, chapati, paratha or just plain. Toss in additional vegetables (capsicums, mushrooms, spinach ..) for variations

Preparation

Prep Time: 5 mins
Cook Time: 2 mins
  1. Heat 1 tsp oil (in a non-stick pan)
  2. Add a pinch of turmeric powder and cumin (optional) powder to oil.
  3. Add the onion and lightly fry it.
  4. Add the tomato and fry it lightly
  5. Add some salt to taste.
  6. Add 1 egg + 1 egg white.
  7. Saute well, till cooked.
  8. Add coriander leaves for garnish
