Egg Bhurji
A tasty, nutritious egg dish. Wrap it in parathas for an easy school lunch. Eat it anytime, for a high-protien, healthy meal - with toast, bread, chapati, paratha or just plain. Toss in additional vegetables (capsicums, mushrooms, spinach ..) for variations

Ingredients
Ingredient quantities shown are for 1 cup
Preparation
- Heat 1 tsp oil (in a non-stick pan)
- Add a pinch of turmeric powder and cumin (optional) powder to oil.
- Add the onion and lightly fry it.
- Add the tomato and fry it lightly
- Add some salt to taste.
- Add 1 egg + 1 egg white.
- Saute well, till cooked.
- Add coriander leaves for garnish
