Baigan bartha
This is a tasty gravy made with the mashed pulp of brinjal. This deep violet vegetable has a good content of water, fiber and potassium. It also has anti diabetic and antihaemorrhoidal properties along with being a cholesterol regulator.

Preparation
- Brush the brinjal with oil and roast on direct fire, turning it frequently until roasted on all sides
- Plunge the roasted brinjal in cold water
- Once its cool, peel of the skin.
- Mash the flesh
- Heat oil in a pan. Add green chilliies and onion and sauté until light brown.
- Add tomatoes and let them cook for few minutes.
- Add red chilli powder, turmeric powder, garam masala and salt.
- Add mashed brinjal. Stir well for 7 minutes.
- Garnish with coriander leaves.
