Baigan bartha

This is a tasty gravy made with the mashed pulp of brinjal. This deep violet vegetable has a good content of water, fiber and potassium. It also has anti diabetic and antihaemorrhoidal properties along with being a cholesterol regulator.

  1. Brush the brinjal with oil and roast on direct fire, turning it frequently until roasted on all sides
  2. Plunge the roasted brinjal in cold water
  3. Once its cool, peel of the skin.
  4. Mash the flesh
  5. Heat oil in a pan. Add green chilliies and onion and sauté until light brown.
  6. Add tomatoes and let them cook for few minutes.
  7. Add red chilli powder, turmeric powder, garam masala and salt.
  8. Add mashed brinjal. Stir well for 7 minutes.
  9. Garnish with coriander leaves.
