Badam Kheer
An enjoyable drink - watch out for the calories though! This version is made with Skim Milk and isn't as high in calories and almonds are anyway good for you as they contain the good fat!

Ingredients
Ingredient quantities shown are for 4 cup
Preparation
- Heat about a tablespoon of milk, add the saffron to the milk and let it stay for a bit.
- Grind the saffron into the milk very lightly to release its flavour and colour (a nice light yellow/orange).
- Boil the rest of the milk with the sugar and almonds until about 4 cups are left.
- Add the milk with saffron.
- Let it cool.
- Blend this once it is cool and then refrigerate.
- Serve chilled!
- Note: If you like you could add a bit of crushed cardamon.
