Amti

This is a staple in most Maharashtrian homes. Nutritious dal/lentil based recipe. Experiment with different lentils to come out with amazing results each time !

Preparation

Prep Time: 10 mins
Cook Time: 20 mins
  1. Boil the dal (in a pressure cooker), till it is soft.
  2. Mash the dal with a hand-beater (avoid the mixer for this)
  3. Soak the tamarinds in water and extract juice.
  4. Use jaggery instead of sugar for a more authentic taste.
  5. Add the remaining ingredients to the boiled, mashed dal and simmer for 10 minutes.
  6. The final consistency should be quite "liquid"y.
  7. Garnish with coriander leaves.
  8. Serve hot.
  9. (You can add a tempering of mustard seeds and oil. (with garlic optional) to enhance the taste of the amti)
  10. Toss in a few vegetables during cooking, as a variation.
