Amti
This is a staple in most Maharashtrian homes. Nutritious dal/lentil based recipe. Experiment with different lentils to come out with amazing results each time !

Ingredients
Ingredient quantities shown are for 5 cup
Preparation
- Boil the dal (in a pressure cooker), till it is soft.
- Mash the dal with a hand-beater (avoid the mixer for this)
- Soak the tamarinds in water and extract juice.
- Use jaggery instead of sugar for a more authentic taste.
- Add the remaining ingredients to the boiled, mashed dal and simmer for 10 minutes.
- The final consistency should be quite "liquid"y.
- Garnish with coriander leaves.
- Serve hot.
- (You can add a tempering of mustard seeds and oil. (with garlic optional) to enhance the taste of the amti)
- Toss in a few vegetables during cooking, as a variation.
