Aloo Paratha

Popular North Indian bread - tastes good by itself and even better with yogurt and pickle or a vegetable.

Preparation

Prep Time: 20 mins
Cook Time: 20 mins
  1. Boil the potatoes.
  2. Chop and lightly fry the onions along with the cumin.
  3. Peel and mash the potatoes.
  4. Mix potatoes, onions and spices and leave aside.
  5. Mix water, atta and a pinch of salt and knead well for 4 minutes. Leave aside for about 5 minutes until soft.
  6. Divide the dough into 10 equal pieces.
  7. Divide the potato mixture into 10 equal pieces as well.
  8. Flatten each dough piece a bit and add the potato mixture in the center.
  9. Close the dough over the potato mixture and leave for about 10 minutes.
  10. Roll out the dough/potato pieces into 4" dia parathas.
  11. Toss the paratha onto a well heated pan and leave it on for about 10 seconds.
  12. Add about 1 tspn of oil and fry the parathason high heat - (approx 2 minutes per paratha).
  13. Serve hot!
