Aloo Paratha
Popular North Indian bread - tastes good by itself and even better with yogurt and pickle or a vegetable.

Ingredients
Ingredient quantities shown are for 10 piece
Preparation
- Boil the potatoes.
- Chop and lightly fry the onions along with the cumin.
- Peel and mash the potatoes.
- Mix potatoes, onions and spices and leave aside.
- Mix water, atta and a pinch of salt and knead well for 4 minutes. Leave aside for about 5 minutes until soft.
- Divide the dough into 10 equal pieces.
- Divide the potato mixture into 10 equal pieces as well.
- Flatten each dough piece a bit and add the potato mixture in the center.
- Close the dough over the potato mixture and leave for about 10 minutes.
- Roll out the dough/potato pieces into 4" dia parathas.
- Toss the paratha onto a well heated pan and leave it on for about 10 seconds.
- Add about 1 tspn of oil and fry the parathason high heat - (approx 2 minutes per paratha).
- Serve hot!
